Changes in the content of total free amino acids, and soluble and insoluble proteins have been examined in detached leaves of five rice (Oryza sativa L.) cultivars subjected to various degrees of desiccation. All the cultivars showed the same pattern of variation of the compounds studied. The content of total free amino acids increased, and the content of insoluble proteins decreased with increasing water stress. However, the soluble protein content decreased in the first ten hours of dehydration and increased thereafter probably because of liberation of insoluble structural proteins as a result of the desiccation.
