According to the present experiments there is a notable effect of the toxic oxalic acid as a protecting solution for vitamin C. The opposite is true of the non-toxic citric acid.
Entire fruits of cambuca (Marlierea edulis), the only material tested in this regard, preserve their vitamin content much better than those desintegrated.
Boiling, even for a short time, reduces the amounts of vitamin C drastically.
Acidity has a remarkable effect on vitamin C contents. Among the solutions tested,a buffer solution of pH 3,0 was more efficient than others of higher or lower acidity.
The amounts of vitamin C in fruits, when stored in refrigerator,were invariably higher than in those kept in normal environment (about 202C).
Ripening caused changes in the amounts of vitamin typical of each species or variety. But no general trend could be established.
The flesh of the fruits showed much higher contents than other parts.
A comparison with fruits of other families indicate that some species of Myrtaceae are good sources of vitamin C (compare table 6 with table 7).
