The effect of the rice grain moisture content at harves st time upon the total and head rice yield in milling was studied in Viçosa, M.G., Brazil.
Samples of the variety "Pratão Precoce" were harvested daily during fifty days, begining when the heads had some grains in the "milk stage". Samples with less than 1% moisture diference were mixed and in this way seven final samples were obtained, varying from 30,63% to 15, 21% moisture content at 2-3% moisture intervals.
After air drying in the shade to 13-14% moisture content mill quality determinations were made using apropriate laboratory equipment.
The moisture content of the rice grains at harvest time affected the totaland head rice yields in milling. The total yield was negatively affected by moisture content increase above 25%. The proportion of head rice was affected by high or low moisture content at harvest, being highest when the moisture was in the range of 20-25%.
