Abstract

The time consumption and low productivity pf the traditional method of collecting cacao '"sweatings" in Brazil subsequently affects the quality and profitability of cacao jelly manufacture.

A modification of the tradicional box which allows the quick separation of the "sweat" is presented together with photographs and assembly details.

The use of this new form of box greatly improves "sweat" yield as well as the quality of the jelly.
