Experiments were recently conducted in the Food Tchnology Department of the Federal University of Viçosa in order to find a more efficient alternative to the present industrial process used for peeling mangoes. This is a manual process which utilizes special knives and although it is a slow and expensive technique, it is the only one presently being used.
Of the various alternative processes tried, the most successful was one which utilized the prior heating of mangoes in boiling water. Afterwards, a small cut was made in the peduncular end of the fruit before the mangoes were squeezed manually to remove the peel. This process was approximately three and one-half times more efficient than the conventional method, increasing the average rate per worker from 19 to 70 kilograms of mangoes peeled per hour.
